- 8 ounces elbow macaroni
- 2 cups shredded cooked BBQ chicken
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 2 cups milk
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Chopped scallions for garnish
Instructions
- Cook macaroni according to package instructions; drain and set aside.
- In a large saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute.
- Gradually add milk, whisking constantly until smooth and thickened.
- Stir in cheddar, Parmesan, smoked paprika, garlic powder, salt, and pepper until cheese melts.
- Add shredded BBQ chicken and cooked pasta; stir until well combined and heated through.
- Serve hot, garnished with chopped scallions.
Notes
- You can substitute rotisserie chicken for BBQ chicken.
- For extra smoky flavor, add a splash of smoked barbecue sauce.
- This dish can be prepared ahead and reheated.
