- 1 1/2 cups all-purpose flour
- 1/2 cup powdered sugar
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 1 cup fresh cranberries
- 1 cup granulated sugar
- 3 large eggs
- 1/4 cup fresh lemon juice
- 2 tablespoons lemon zest
- 2 tablespoons cornstarch
Instructions
- Preheat oven to 350°F (175°C). Line a baking pan with parchment paper.
- Mix flour, powdered sugar, and salt in a bowl. Cut in cold butter until crumbly. Press into the bottom of the prepared pan.
- Bake crust for 15 minutes until lightly golden.
- Spread cranberries evenly over the baked crust.
- Whisk together sugar, eggs, lemon juice, lemon zest, and cornstarch. Pour over cranberries.
- Bake for 25-30 minutes until filling is set and bubbly. Cool before slicing.
