  • 1/2 cup powdered sugar

  • 1 cup fresh cranberries
  • 1 cup granulated sugar
  • 3 large eggs
  • 1/4 cup fresh lemon juice
  • 2 tablespoons lemon zest
  • 2 tablespoons cornstarch

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking pan with parchment paper.
  2. Mix flour, powdered sugar, and salt in a bowl. Cut in cold butter until crumbly. Press into the bottom of the prepared pan.
  3. Bake crust for 15 minutes until lightly golden.
  4. Spread cranberries evenly over the baked crust.
  5. Whisk together sugar, eggs, lemon juice, lemon zest, and cornstarch. Pour over cranberries.
  6. Bake for 25-30 minutes until filling is set and bubbly. Cool before slicing.
