Instructions
- Place chicken breasts in the slow cooker and season with salt, pepper, thyme, and rosemary.
- In a bowl, combine lemon juice, zest, garlic, and olive oil. Pour over the chicken.
- Add rice and chicken broth around the chicken in the slow cooker.
- Cover and cook on low for 6-8 hours or until chicken is tender and rice is cooked.
- Shred chicken if desired, garnish with fresh parsley, and serve hot.

- For added flavor, include sliced lemon on top during cooking.
- Use brown rice for a healthier option, adjusting cooking time accordingly.
