- 2 tbsp olive oil
- 8 oz mushrooms, finely chopped
- 2 cloves garlic, minced
- 1 package puff pastry sheets
- 1 egg, beaten
- Salt and black pepper to taste
- Fresh thyme sprigs for garnish
Instructions
- Preheat oven to 400°F (200°C).
- Season beef with salt and pepper. Sear in hot oil until browned on all sides. Let cool.
- Cook mushrooms and garlic in a skillet until moisture evaporates. Let cool.
- Spread mushroom duxelles over beef tenderloin.
- Wrap beef in puff pastry, seal edges, and brush with beaten egg.
- Bake in preheated oven for 25-30 minutes until golden brown.
- Rest before slicing. Garnish with thyme and serve hot.
