- 1 lb beef stew meat, cubed
- 4 cups beef broth
- 2 carrots, diced
- 2 potatoes, diced
- 1 cup green beans, chopped
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tbsp tomato paste
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- In a large pot, brown beef cubes over medium heat until cooked through.
- Add chopped onion and garlic, sauté until translucent.
- Stir in tomato paste, thyme, salt, and pepper.
- Pour in beef broth and bring to a boil.
- Add carrots, potatoes, reduce heat, and simmer for 45 minutes.
- Add green beans in the last 10 minutes of cooking.
- Serve hot garnished with fresh herbs.
Notes
- You can add other vegetables like celery or peas for variety.
- For a thicker soup, blend a portion of the soup and return to pot.
