Ingredients

  • 1 lb beef stew meat, cubed
  • 4 cups beef broth
  • 2 carrots, diced
  • 2 potatoes, diced
  • 1 cup green beans, chopped
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown beef cubes over medium heat until cooked through.
  2. Add chopped onion and garlic, sauté until translucent.
  3. Stir in tomato paste, thyme, salt, and pepper.
  4. Pour in beef broth and bring to a boil.
  5. Add carrots, potatoes, reduce heat, and simmer for 45 minutes.
  6. Add green beans in the last 10 minutes of cooking.
  7. Serve hot garnished with fresh herbs.
