- 4 large potatoes, diced
- 1 lb seasoned ground beef or black beans
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/2 cup chopped fresh cilantro
- 1/2 cup salsa
- Olive oil, salt, pepper, taco seasoning
Instructions
- Preheat oven to 400°F (200°C). Toss diced potatoes with olive oil, salt, pepper, and taco seasoning. Roast for 25-30 minutes until crispy.
- Cook ground beef with taco seasoning in a skillet or heat black beans if vegetarian.
- Assemble bowls by dividing roasted potatoes, cooked meat or beans, cheese, salsa, and sour cream.
- Garnish with chopped cilantro and serve immediately.
Notes
- You can substitute chicken or turkey for beef.
- Use Greek yogurt instead of sour cream for a healthier option.
