- 2 pounds beef chuck roast, cut into chunks
- 2 tablespoons olive oil
- 1 large onion, diced
- 3 carrots, sliced
- 3 potatoes, cubed
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Sear beef chunks until browned, then set aside.
- Sauté onions and garlic until fragrant.
- Add beef back to the pot along with carrots, potatoes, thyme, salt, and pepper.
- Pour in beef broth, bring to a boil, then reduce to a simmer.
- Cover and cook for 2-3 hours until meat is tender and flavors meld.
Notes
- If using a slow cooker, transfer all ingredients and cook on low for 6-8 hours.
- Adjust seasoning as needed before serving.
