Ingredients

  • 1 pound kielbasa sausage, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 1 can diced tomatoes (14 oz)
  • 4 cups chicken broth
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat a large pot over medium heat and add sliced kielbasa. Cook until browned, then remove and set aside.
  2. In the same pot, sauté onion and garlic until translucent.
  3. Add carrots, celery, paprika, thyme, salt, and pepper. Cook for 5 minutes.
  4. Pour in diced tomatoes and chicken broth, bring to a boil.
  5. Lower heat, return kielbasa to the pot, and simmer for 20 minutes.
  6. Garnish with fresh parsley before serving.
