- 1 lb beef stew meat, cubed
- 2 large potatoes, diced
- 3 carrots, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 can diced tomatoes
- 1 can kidney beans, drained
- 4 cups beef broth
- 1 teaspoon paprika
- 1 teaspoon cumin
- Salt and pepper to taste
Instructions
- In a large pot, brown the beef cubes over medium heat. Remove and set aside.
- Sauté onions and garlic until fragrant.
- Add potatoes, carrots, and spices; cook for 5 minutes.
- Return beef to the pot, add tomatoes, beans, and beef broth.
- Bring to a boil, then reduce heat and simmer for 1.5 hours until tender.

- Use fresh herbs for garnish, such as parsley.
- You can add corn or bell peppers for extra flavor.
