- 1 cup chicken broth
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chicken chunks, season with salt, pepper, and thyme. Cook until browned.
- Add garlic and cook for 1 minute until fragrant.
- Stir in carrots, bell peppers, and broccoli. cook for 5 minutes.
- Pour in chicken broth and simmer for 10 minutes until vegetables are tender and chicken is cooked through.
