- 2 lbs chicken breasts, diced
- 1 large onion, thinly sliced
- 3 cloves garlic, minced
- 1 cup orzo pasta
- 4 cups chicken broth
- 1 cup shredded Gruyere or Swiss cheese
- 2 tbsp olive oil
- 2 tbsp butter
- Salt and pepper to taste
- Fresh thyme for garnish
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium-high heat. Sear the chicken until golden and cooked through. Remove and set aside.
- In the same skillet, add butter and sliced onions. Cook slowly until caramelized, about 15 minutes, stirring occasionally.
- Add garlic and cook for another minute.
- In a baking dish, combine cooked chicken, caramelized onions, orzo, and chicken broth. Stir well.
- Top with shredded cheese and fresh thyme.
- Bake uncovered for 25-30 minutes until bubbly and golden on top.
Notes
- Adjust seasoning with salt and pepper according to taste.
- Feel free to add mushrooms or herbs for added flavor.
- This dish pairs well with a simple green salad.
