Instructions
- In a bowl, whisk eggs, milk, salt, and pepper until well combined.
- Cook the egg mixture over low heat, stirring gently until fluffy and just set.
- Spread butter or mayonnaise on bread slices if desired.
- Divide the fluffy eggs evenly between two slices, then top with remaining bread slices.
- Gently press and cut the sandwich in half. Garnish with herbs and serve.
Notes
For extra flavor, add a dash of soy sauce or a sprinkle of chopped chives. Use fresh bread for best texture. Can be made ahead and refrigerated briefly.
