- 4 large bell peppers, halved and seeded
- 1 lb ground beef
- 1 cup cooked rice
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup tomato sauce
- 1 cup shredded cheese
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat oven to 375°F (190°C).
- Prepare bell peppers by halving and removing seeds.
- In a skillet, heat olive oil and sauté onions and garlic until translucent.
- Add ground beef, cook until browned, then season with salt and pepper.
- Stir in cooked rice and tomato sauce, simmer for a few minutes.
- Stuff the peppers with the beef mixture, place on a baking dish.
- Top each with shredded cheese.
- Bake for 25-30 minutes until peppers are tender and cheese is melted.
- Garnish with parsley and serve hot.
Notes
- You can substitute ground turkey or chicken for beef.
- Feel free to add diced vegetables to the filling.
- For extra flavor, sprinkle with chili powder or cumin.
