  • 4 large bell peppers, halved and seeded
  • 1 lb ground beef
  • 1 cup cooked rice
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup tomato sauce
  • 1 cup shredded cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Prepare bell peppers by halving and removing seeds.
  3. In a skillet, heat olive oil and sauté onions and garlic until translucent.
  4. Add ground beef, cook until browned, then season with salt and pepper.
  5. Stir in cooked rice and tomato sauce, simmer for a few minutes.
  6. Stuff the peppers with the beef mixture, place on a baking dish.
  7. Top each with shredded cheese.
  8. Bake for 25-30 minutes until peppers are tender and cheese is melted.
