- 4 large bell peppers (red, yellow, green)
- 1 lb ground beef or turkey
- 1 cup cooked rice
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup shredded cheese (cheddar or pepper jack)
- 1 cup chopped tomatoes
- 1 tsp paprika
- Salt and pepper to taste
- Fresh herbs for garnish
Instructions
- Preheat oven to 375°F (190°C).
- Cut the tops off peppers and remove seeds and membranes.
- In a skillet, cook ground meat with onions, garlic, salt, pepper, and paprika until browned.
- Mix cooked rice, chopped tomatoes, and cooked meat mixture.
- Stuff peppers with the rice and meat mixture, then top with shredded cheese.
- Place stuffed peppers in a baking dish and bake for 25-30 minutes until peppers are tender and cheese is melted.
- Garnish with fresh herbs and serve hot.

- Feel free to add other vegetables like zucchini or mushrooms for extra flavor.
