- 1 cup coconut milk

Instructions
- Preheat the oven to 400°F (200°C). Season the cod fillets with salt, pepper, and lemon zest.
- In a small saucepan, combine coconut milk, lemon juice, garlic, and olive oil. Bring to a simmer and cook until slightly thickened, about 5 minutes.
- Place the cod fillets on a baking sheet lined with parchment paper. Pour the coconut lemon cream sauce over the fish.
- Bake for 15-20 minutes, until the fish flakes easily with a fork.
- Garnish with fresh parsley and serve hot with your favorite sides.
