- 4 large bell peppers, halved and seeded
- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 taco seasoning packet
- 1 cup shredded cheddar cheese
- 1/2 cup diced tomatoes
- Fresh cilantro for garnish
- Sour cream for serving
Instructions
- Preheat oven to 375°F (190°C).
- In a skillet, cook ground beef with diced onion and minced garlic until browned. Add taco seasoning and cook according to packet instructions.
- Stuff each bell pepper half with the beef mixture and place in a baking dish.
- Sprinkle shredded cheese on top of each stuffed pepper.
- Bake for 20-25 minutes until peppers are tender and cheese is melted.
- Garnish with diced tomatoes and cilantro. Serve with sour cream.
Notes
- You can substitute ground turkey or chicken for beef.
- For a vegetarian version, use seasoned lentils or beans instead of meat.
