  • 4 large bell peppers, halved and seeded
  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 taco seasoning packet
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced tomatoes
  • Fresh cilantro for garnish
  • Sour cream for serving

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, cook ground beef with diced onion and minced garlic until browned. Add taco seasoning and cook according to packet instructions.
  3. Stuff each bell pepper half with the beef mixture and place in a baking dish.
