- 3-4 chicken breasts, boneless and skinless
- 3 carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a skillet over medium heat. Sear chicken breasts until golden on both sides.
- Place chicken in the slow cooker. Add carrots, potatoes, onion, garlic, thyme, rosemary, salt, and pepper.
- Pour in chicken broth. Cover and cook on low for 6-8 hours or until chicken is tender.
- Shred the chicken slightly with a fork before serving. Adjust seasoning as needed.
Notes
- You can substitute chicken thighs if preferred.
- Add peas or green beans for extra vegetables.
