- 2 lbs boneless, skinless chicken breasts or thighs, sliced
- 3 bell peppers (red, yellow, green), sliced
- 1 large onion, sliced
- 2 tbsp olive oil
- 2 tsp chili powder
- 1 tsp cumin
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 8 small flour tortillas
- Fresh cilantro and lime for garnish
Instructions
- Preheat oven to 400°F (200°C). Line a large sheet pan with parchment paper.
- In a small bowl, mix chili powder, cumin, smoked paprika, garlic powder, salt, and pepper.
- In a large bowl, toss chicken slices with 1 tbsp olive oil and spice mixture.
- On the sheet pan, spread the sliced peppers, onions, and seasoned chicken evenly.
- Bake for 20-25 minutes until chicken is cooked through and vegetables are tender.
- Warm tortillas in the oven during the last 5 minutes. Serve fajitas with cilantro and lime wedges.
Notes
- You can add sliced jalapenos for extra heat.
- For a dairy-free option, skip cheese and sour cream.
