Ingredients

  • 2 lbs boneless, skinless chicken breasts or thighs, sliced
  • 3 bell peppers (red, yellow, green), sliced
  • 1 large onion, sliced
  • 2 tbsp olive oil
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 8 small flour tortillas
  • Fresh cilantro and lime for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Line a large sheet pan with parchment paper.
  2. In a small bowl, mix chili powder, cumin, smoked paprika, garlic powder, salt, and pepper.
  3. In a large bowl, toss chicken slices with 1 tbsp olive oil and spice mixture.
  4. On the sheet pan, spread the sliced peppers, onions, and seasoned chicken evenly.
  5. Bake for 20-25 minutes until chicken is cooked through and vegetables are tender.
  6. Warm tortillas in the oven during the last 5 minutes. Serve fajitas with cilantro and lime wedges.
