- 1 pound ground beef
- 1 cup cooked tortellini
- 1 can diced tomatoes (14 oz)
- 1 onion, chopped
- 3 garlic cloves, minced
- 4 cups beef or vegetable broth
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Fresh basil or parsley for garnish
Instructions
- Preheat oven to 400°F. Form ground beef into small meatballs and bake for 15 minutes until cooked through.
- In a large pot, sauté onion and garlic until fragrant.
- Add diced tomatoes, broth, Italian seasoning, salt, and pepper. Bring to a boil.
- Add baked meatballs and tortellini. Simmer for 5-7 minutes.
- Garnish with fresh herbs and serve hot.
