- 1 lb Italian sausage, sliced
- 1 package (9 oz) cheese tortellini
- 1 can (14.5 oz) diced tomatoes
- 4 cups chicken broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup spinach, chopped
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Grated Parmesan and fresh basil for garnish
Instructions
- In a large pot, cook Italian sausage until browned. Remove and set aside.
- In the same pot, sauté onion and garlic until fragrant.
- Add diced tomatoes, chicken broth, Italian seasoning, salt, and pepper. Bring to a boil.
- Reduce heat and stir in sausage, tortellini, and spinach. Cook until tortellini is tender.
- Serve hot, garnished with Parmesan cheese and basil.

- You can add more vegetables like carrots or celery for extra flavor.
