Ingredients

- 2 lbs beef stew meat, cubed
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 carrots, sliced
- 3 potatoes, peeled and cubed
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 teaspoon thyme
- 2 bay leaves
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add beef cubes and cook until browned. Remove and set aside.
- In the same pot, sauté onions and garlic until fragrant.
- Add beef back to the pot along with carrots, potatoes, thyme, bay leaves, salt, and pepper.
- Pour in beef broth and bring to a boil.
- Reduce heat, cover, and simmer for 1.5 to 2 hours until beef is tender.
- Adjust seasoning as needed and serve hot.
Notes
- You can add peas or mushrooms for extra flavor.
- For a thicker stew, mix 2 tablespoons of cornstarch with cold water and add to the simmering stew during the last 10 minutes.
