Ingredients

  • 2 lbs beef stew meat, cubed
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 carrots, sliced
  • 3 potatoes, peeled and cubed
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 teaspoon thyme
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add beef cubes and cook until browned. Remove and set aside.
  3. In the same pot, sauté onions and garlic until fragrant.
  4. Add beef back to the pot along with carrots, potatoes, thyme, bay leaves, salt, and pepper.
  5. Pour in beef broth and bring to a boil.
  6. Reduce heat, cover, and simmer for 1.5 to 2 hours until beef is tender.
  7. Adjust seasoning as needed and serve hot.

Notes

  • You can add peas or mushrooms for extra flavor.
  • For a thicker stew, mix 2 tablespoons of cornstarch with cold water and add to the simmering stew during the last 10 minutes.
