Instructions
- Add diced potatoes, onion, garlic, broth, butter, salt, and pepper into the crock pot.

- Use a hand blender to blend until smooth or leave some chunks for texture.
- Stir in heavy cream or milk, then serve hot topped with cheese and chives.
