- 2 lbs beef stew meat, cubed
- 4 large potatoes, diced
- 3 carrots, sliced
- 1 cup frozen peas
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 tbsp tomato paste
- 1 tsp thyme
- Salt and pepper to taste
Instructions
- Place beef, potatoes, carrots, onion, garlic, thyme, salt, and pepper into the crock pot.
- Pour in beef broth and stir to combine.
- Cover and cook on low for 6-8 hours until beef is tender and vegetables are cooked.
- Add peas during the last 30 minutes of cooking.
- Serve hot in bowls, garnished with fresh herbs if desired.
Notes
- Adjust seasoning to taste.
- You can add other vegetables like celery or green beans.
- For thicker stew, mash some potatoes before serving.
