- 1 lb boneless, skinless chicken breasts or thighs
- 4 cups chicken broth

- 2 tablespoons chopped fresh parsley
- 2 carrots, diced
- 2 celery stalks, sliced
- 1 onion, chopped
- 2 cloves garlic, minced
Instructions
- Cook chicken in boiling water until fully cooked, then shred.
- In a large pot, sauté onion, carrot, and celery until tender. Add garlic and cook for 1 minute.
- Pour in chicken broth and bring to a boil. Add shredded chicken and simmer for 10 minutes.
- Meanwhile, prepare dumplings: in a bowl, mix flour, baking powder, salt, milk, and parsley to form a dough.
- Drop spoonfuls of dough into the simmering soup. Cover and cook for 15 minutes, until dumplings are fluffy and cooked through.
