- 1 lb boneless chicken breasts, sliced
- 1 tablespoon Cajun seasoning
- 2 tablespoons olive oil
- 1 cup orzo pasta
- 3 cups chicken broth
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Season chicken slices with Cajun seasoning and set aside.
- Heat olive oil in a large skillet over medium heat.
- Cook chicken until browned and cooked through, about 5-7 minutes. Remove and set aside.
- In the same skillet, sauté garlic and bell peppers until tender.
- Add orzo and stir to coat with spices and vegetables.
- Pour in chicken broth and bring to a boil. Reduce heat, cover, and simmer until orzo is cooked, about 10 minutes.
- Return chicken to the skillet, stir to combine, and heat through.
- Garnish with parsley before serving.

- Feel free to add some chopped green onions or a squeeze of lemon for extra flavor.
