- 4 boneless chicken breasts
- 1 cup fresh cranberries
- 1/2 cup brie cheese, sliced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon fresh thyme leaves
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet over medium-high heat. Season chicken breasts with salt and pepper.
- Sear chicken for 2-3 minutes per side until golden brown.
- Transfer chicken to a baking dish. Top each with slices of brie cheese and cranberries.
- Sprinkle with minced garlic and thyme.
- Bake for 20-25 minutes until chicken is cooked through and cheese is melted and bubbly.
