- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup dried tart cherries, chopped if large
- 2/3 cup semi-sweet chocolate chips
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
- In a separate large bowl, cream butter and sugar until light and fluffy. Mix in egg and vanilla.
- Gradually add dry ingredients to wet, mixing until combined.
- Fold in cherries and chocolate chips.
- Drop spoonfuls of dough onto prepared baking sheets, spacing about 2 inches apart.
- Bake for 10-12 minutes until cookies are set and slightly cracked.
- Allow to cool on the baking sheet for 5 minutes, then transfer to wire racks to cool completely.
Notes
- Use dried tart cherries for optimal flavor and texture.
- Chocolate chips can be replaced with chopped chocolate bars for a richer taste.
- Cookies remain chewy if stored in an airtight container for up to 3 days.
