Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 vanilla bean, scraped
  • ½ cup sour cream
  • ½ cup brown butter

Instructions

  1. Preheat oven to 325°F (160°C). Combine graham cracker crumbs with melted butter and press into the bottom of a 9-inch springform pan. Bake for 10 minutes.
  2. In a large mixing bowl, beat cream cheese and sugar until smooth. Add vanilla beans and mix well.
  3. Add eggs one at a time, mixing thoroughly after each addition. Fold in sour cream.
  4. Pour the filling over the prepared crust. Bake 50-60 minutes until set.
  5. Meanwhile, melt butter until golden brown, then let it cool slightly. Drizzle over the cooled cheesecake before serving.
