Instructions
- In a large pot, sauté chopped onion and minced garlic in olive oil until translucent.
- Add beans, broth, thyme, salt, and pepper. Bring to a boil.
- Reduce heat and simmer for 20 minutes, then blend partially with an immersion blender for a creamy texture.
- Serve hot, topped with crispy bacon crumbles and fresh herbs if desired.
