- 1 lb large shrimp, peeled and deveined
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 cup heavy cream
- 2 tbsp Cajun seasoning
- 3 cloves garlic, minced
- 1 tbsp olive oil
- 1/4 cup grated Parmesan cheese
- Fresh parsley for garnish
Instructions
- Cook pasta until al dente according to package instructions, then drain and set aside.
- In a skillet, heat olive oil over medium heat; cook shrimp until pink and cooked through, about 3-4 minutes. Add minced garlic and cook for 1 minute more.
- Combine cooked shrimp, sliced peppers, Cajun seasoning, heavy cream, and cooked pasta in the slow cooker. Stir to coat everything evenly.
- Cover and cook on low for 1-2 hours, until flavors meld and sauce is heated through.
- Stir in Parmesan cheese before serving and garnish with chopped parsley.
Notes
- You can substitute chicken or sausage for shrimp for variation.
- Adjust Cajun seasoning amount to control spice level.
- For a lighter version, use half-and-half instead of heavy cream.
