- 2 lbs beef chuck roast, cut into chunks
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 tsp thyme
- 2 cups egg noodles
- 2 tbsp soy sauce (optional)

Instructions
- Place beef chunks, chopped onion, garlic, thyme, salt, pepper, and beef broth into the slow cooker. Cook on low for 6-8 hours until beef is tender.
- Shred the cooked beef with two forks and return to the cooker.
- Add egg noodles and soy sauce (if using). Cook for an additional 20 minutes until noodles are tender.
Notes
- Adjust seasoning to taste. You can add vegetables like carrots or celery for extra flavor.
- For a thicker gravy, mix a tablespoon of flour or cornstarch with cold water and stir into the stew before serving.
