Instructions
- Heat olive oil and butter in a large pot over medium heat. Add onions and cook slowly, stirring frequently, until deeply caramelized, about 45 minutes.
- Add garlic and thyme, cook for another minute.
- Deglaze with red wine if using, scraping up browned bits.
- Add broth, salt, and pepper. Simmer for 30 minutes.
- Toast bread slices until crispy.
- Ladle soup into oven-safe bowls, place toasted bread on top, and sprinkle with cheese.
- Broil until cheese bubbles and turns golden, about 3-5 minutes.
