Instructions
- Preheat oven to 375°F (190°C).
- Mix oats, cinnamon, nutmeg, and ginger in a large bowl.
- In another bowl, whisk pumpkin puree, maple syrup, eggs, vanilla, and milk.
- Combine wet and dry ingredients, then pour into a greased baking dish.
- Sprinkle with chopped nuts if desired.
- Bake for 25-30 minutes until golden brown and set.
- Serve warm with a drizzle of honey or a splash of milk.
Notes
- For added flavor, include chocolate chips or cranberries.
- Best enjoyed fresh but can be stored refrigerated for up to 3 days.
