- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups (180g) rolled oats
- 1 1/2 cups (190g) all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup (180g) chocolate chips
- 1/2 cup (60g) chopped nuts (optional)
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Cream together butter, brown sugar, and granulated sugar until light and fluffy.
- Add eggs one at a time, mixing well after each, then stir in vanilla.
- In a separate bowl, whisk together oats, flour, baking soda, and salt.
- Gradually add dry ingredients to wet mixture, mixing until just combined.
- Fold in chocolate chips and nuts if using.
- Drop spoonfuls of dough onto prepared baking sheets, spacing them evenly.
- Bake for 10-12 minutes or until edges are golden brown.
- Allow cookies to cool on a wire rack before serving.
