Instructions
- Soak the beans overnight or use quick soak method.
- In a large pot, sauté onion, bell pepper, celery, and garlic until fragrant.
- Add the soaked beans, smoked sausage, spices, and chicken broth.
- Bring to a boil, then reduce heat and simmer for 1.5-2 hours until beans are tender.
- Cook rice separately according to package instructions.
- Serve the beans over rice, garnished with green onions and cilantro.
