- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup shredded cheddar cheese
- 1 cup heavy cream
- 2 tbsp butter
- Salt and pepper to taste
- Chopped chives for garnish
Instructions
- Place diced potatoes, onion, garlic, broth, salt, and pepper into the crock pot.
- Cook on low for 6-8 hours until potatoes are tender.
- Use a potato masher to mash some of the potatoes for a thicker texture.
- Stir in butter, heavy cream, and shredded cheese until melted and smooth.
- Serve hot, garnished with chopped chives and additional cheese if desired.
Notes
- For a vegan version, use plant-based cheese and cream.
- Adjust thickness by mashing more or less potatoes.
- Best served with crusty bread or bread rolls.
